WPC 80 (regular and instant) is the standard whey protein raw material for protein powders, bars and shakes. WPI 90 (native and instant) is used in high-protein, low-fat and lean-label formulations. MPC 80 and MPI 90 provide slow-release protein profiles for blended protein products. Sodium caseinate and MPC are used in meal replacement and weight management products.
Demineralised whey powder (40% and 90%) is used as the primary whey base in infant formula — the demineralisation level is selected based on formula type and target mineral profile. MPC and WPC 35 provide protein enrichment in follow-on formula and growing-up milks. Clinical nutrition applications use caseinates as protein sources in tube feeds and oral nutritional supplements.
Whey protein concentrate (WPC 35) is the standard bakery protein ingredient — it improves texture, browning (Maillard reaction) and moisture retention. Egg albumen powder provides structure and aeration in meringues, angel cakes and bakery products requiring heat-stable foam. Sodium caseinate acts as a protein source and emulsifier in processed meat, spreads and dairy analogues.
Full cream milk powder (FCMP 26%) and skimmed milk powder (SMP) are primary milk ingredients in milk and white chocolate — contributing to milk fat content, flavour and colour. Sweet whey powder provides a cost-effective lactose and mineral source in compound chocolate and confectionery products.
Skimmed milk powder and FCMP provide the milk solids non-fat (MSNF) base in ice cream. WPC adds protein without significantly increasing fat content. Egg albumen powder is used in premium ice cream as an emulsifier and overrun stabiliser. Milk permeate provides a cost-effective source of milk minerals and lactose.
MPC 85 and MPI 90 are used in high-protein functional foods, RTD beverages and protein-fortified dairy products. Sodium caseinate provides clean-label protein with excellent heat stability and water-binding in processed food applications. Rennet casein is the primary raw material for cheese analogues and pizza topping stretchy cheese.
